Last night Ian Nelson from Sunnyfields Farm was in cooking live, I promised we'd put the recipies on here:
Turnip Greens
IngredientsA large bundle of young turnip greens
A few rashers of bacon
How to prepare
1) Thoroughly wash the turnip greens.
2) Cover the greens and steam / boil until tender. 3) Cook the bacon in a frying pan.
4) Drain the majority of the water off the turnip greens, leaving just enough water to stop the greens burning on the bottom of the pan – add the bacon and mix together.
5) Serve quite quickly as soft greens do cool very quickly.
Turnip and Pear Saute
IngredientsA few turnips – small and tender best
2 pears
Butter
shallots
walnut halves
1 tablespoon of honey
Crumbled blue cheese
Chopped fresh parsley
1) Peel the turnips, cut in half and slice
2) Cut the pear in half, core and slice
3) Sauté the turnips in the frying pan until golden - about 7 mins
4) Add the pears and shallots - cook for 4 more minutes to soften the shallots
5) Add the walnut halves and cook until hot - about 2 mins
6) Season with salt and pepper
7) Drizzle with honey, crumbled blue cheese and chopped parsley
We also had some Roe Deer fillet steak courtesy of Lee from New House Venison which we picked up from Winchester Farmers’ Market that morning. This we pan fried with some local Rape Seed oil from Pratts Oil. We cooked the steak for just about 3 minutes on each side and then took it out of the pan to rest for a about 3 more minutes.
